Goldilocks Bakeshop, Inc. is a bakeshop chain based in the Philippines, which produces and distributes Philippine cakes and pastries. The chain was named after Goldilocks, a character from the fairy tale Goldilocks and the Three Bears.
Goldilocks traces its roots to the collaboration and complementary talents of the women, whose collective love for good food fueled what has been transformed into the global enterprise today.
Through hard work, dedication, and an uncompromising commitment to total customer satisfaction, Goldilocks is now the largest Filipino-owned bakeshop chain in the world. As a true global brand, it has expanded to more than 420 stores in the Philippines and overseas markets, and now employs a workforce of over 2,000 people. Likewise, the opening day total sales of P574 back in 1966 has multiplied thousands of times over.
This operations manual serves as a documentation that our organization uses to guide our members and workers in doing each of our tasks appropriately and relatively economically. This manual will provide the established standard procedures for executing our operations to manufacture our products and offer our services in a safe condition.
We, Goldilocks Bakeshop, Inc. (‘Goldilocks,’ ‘we,’ or ‘us’), provide a full range of food-related services. In providing such services, we rely on personal information, whether it be the information of our clients, our employees, or any other individual with whom we have a contractual relationship.

VP/ Store Operation Director
VP/Store Operation Director oversees the daily operations of the store. He is in charge of ensuring that store operations run smoothly. He also solves problems as they arise and makes various decisions regarding the store or its customers.
MFG Director
The Director of Manufacturing is responsible for overseeing manufacturing and leading key initiatives to improve manufacturing efficiencies and plant operations, develop and maintain plant operations by efficiently and profitably meeting company standards and improving the company’s competitive position.
Marketing Director
Determines annual and gross-profit plans by forecasting and developing annual sales quotas for regions; projecting expected sales volume and profit for existing and new products; analyzing trends and results; establishing pricing strategies; recommending selling prices; monitoring costs, competition, supply, and demand.
Finance Director
He is responsible to develop and maintain timely and accurate financial statements and reports that are appropriate for the users and in accordance with generally accepted accounting principles (GAAP)Develop, implement, and ensure compliance with internal financial and accounting policies and procedures
Technical Services Director
He is responsible for managing and directing the company’s technical services for all company products.
HR Director
HR director is responsible to take a leadership role in developing a culture that enables employees to perform in accordance to a firm’s objectives. HR directors effectively plan, design, develop and evaluate human resource-related initiatives that support organizational strategic goals.
Research and Development Officer
The Research and Development Officer conducts a thorough study to develop or to improve a product and determine product specifications, production costs and a production time line.
Quality Assurance Officer
The Quality Assurance Officer ensure the products meet the quality standards. Implement and monitor Good Manufacturing Practices. Inspect facilities for compliance with standards and review customer feedback and respond to any complaints.
Accounting Clerk
The Accounting Clerk is responsible for providing accounting support to accounting supervisors and other managers within the department as well can perform accounting and clerical functions.
Audit Officer
The position is responsible for planning and reviewing processes and related activities of functional and organizational units including compliance to Company Policies & Procedures; conducting pre- implementation system reviews and evaluating the adequacy and effectiveness of internal controls of audited activities; recommending improvements to enhance operational efficiencies, reduce costs and safeguard company assets; and facilitating the review and finalization of the audit reports, in coordination with the Internal Audit group Manager, Auditors and Auditees.
Company Nurse
The position is expected to provide immediate direct medical care and assistance to sick or injured employees in the workplace. The incumbent helps on establishing a healthy and productive work environment.
Billing Accountant
Reporting to the Plant Accountant, the position is responsible for the timely, complete and accurate billing of all deliveries of products, services and other items including Royalty and Advertising fee to customers, affiliates, officers, employees and other parties.
Marketing Officer
Foodshop and Corporate Marketing Officer is responsible for developing and maintaining marketing strategies to meet corporate/ foodshop marketing objective through effective planning, implementation, monitoring and evaluation of plans and strategies.
Assistant Srore Manager
In charge for the overall daily operations of the store by ensuring attainment of sales targets, execution of sales generating plans and programs, strict implementation of standard control and consistent rendering of outstanding customer service.
Cost Accountant
Responsible for the observation on compliance and implementation of existing cost and inventory accounting policies and procedures, propose and draft revisions when necessary, certifies correctness of records, coordinate and assist Plant Accountants with their functions related to cost ad inventory, lead the cost and inventory staff and perform some administrative functions. Undertake a variety of coordination with the connecting departments, stores and plants for the smooth preparation of reports that contribute towards the preparation of financial statement. Ensure that the timetable for the deadline is being followed.
Communication Officer
The Corporate Communication Officer is expected to mainly develop and create comprehensive social media strategies that make use of social media marketing methods and techniques to establish, maintain and increase brand awareness and patronization.
Business Analytics Officer
The Business Analytics Officer is responsible for developing new insights through understanding of business performance and supporting strategic business information analytics by streamlining and consolidating information channels creating business value reporting initiatives. Drives self-service reporting platforms and develop program to enhance the users’ skills on data mapping analysis. Goldilocks's Procedures involve three(3) main processes:
The firm employs the Continuous Mass Production Process in the production and manufacturing of Goldilocks goods. Because of enormous stockpiles of finished product, the cakes are made-to-stock in continuous high-volumes of around 20000 layers each day. The baking procedure necessitates the use of automated, specialized equipment. Because the materials or fluids being processed are always in motion, performing chemical reactions, or undergoing mechanical or thermal treatment, it is a continuous process of 24/7.
Because Goldilocks cakes have a shelf life of only 5 days, the company manages their inventory using the First In, First Out method. This is also done to reduce spoilage of their cakes and pastries and to keep expenses under control. As soon as the items leave the factory, delivery vehicles leave in the morning to transport them to particular destinations.
Baked products (breads, cakes, pastries) and hot food items are delivered every day from central commissaries located in Tarlac and in Mandaluyong to ensure freshness and to avoid overstocking in inventory. Daily requirements are forecast per location and sent to central head office where the data is consolidated. The consolidated requirements form the basis for the daily production plan of which items to make/cook/bake and deliver to each store or location. This centralization allows economies of scale, example in procurement of important ingredients such as flour, cream, sugar, as well as more efficient production processes using industrial-grade, high speed equipment. It also allows centralize quality assurance (QA) to ensure highest quality taste, consistency and safety.
